Finally summer has arrived - and I have opened the grill. This is easy and a great alternate to the ubiquitous tomato bruschetta. Have fun!
Prepare grill - coals should be hot.
Slice good Italian style bread in slices 1/2-3/4 inch thick. Brush with olive oil that has been embellished with garlic salt and pepper. Toss on the grill until just toasted then flip and repeat.
Spread grilled slices with goat cheese and the onion mixture, either hot or cold - very yummy either way.
Two Onion Mixture
2 Sweet onions - chopped into medium pieces
4 Shallots - chopped
In a medium skillet, sauté onions in olive oil until tender and just starting to brown. Add thyme, salt and pepper. Sauté until caramelized, turn off heat and cover for about 5 minutes. This will help to release the tasty brown stuff sticking to the pan. Make the onions taste better and helps with clean up (bonus)!
