OK, Grilled Vegetables ... What Now?
* Keep these on hand to create a beautiful antipasto plate for guests. If you like supplement the plate with Greek olives, cured meats and marinated green beans.
* Make grilled sandwiches from the vegetables using Italian breads and adding smoked mozzarella or provolone cheeses. For more variety add toasted pine nuts and artichokes.
*Chop the vegetables into smaller pieces and toss into a pasta sauce - either marinara or light olive oil. Maybe add some sundried tomatoes too! If you would rather have pasta salad just add some extra white wine vinegar, olive oil and either honey or sugar to sweeten.
*If you have extra oil from the vegetables, it makes the greatest dip for bread!
