Orzo Pasta Salad

1 1/2 cups Orzo pasta
1 medium cucumber, diced
1 large tomato, seeded and diced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley or arugula, chopped
1/4 cup fresh lemon juice
1/4 cup olive oil
salt and pepper

Boil 4 cups of salted water add the orzo pasta and cook to al dente. Drain. Mix all remaining ingredients into the pasta and serve either at room temperature or chilled.
