My friend and fellow Realtor®, Mike, created this recipe which wowed (I think that is a real word?!) my family. All the alcohol boils off, so don't be afraid of the title - everyone will love it! Serve with roasted new potatoes or mashed potatoes and your favorite vegetable. Serves 4.
4 pork top loin steaks
Sauté pork tenderloins in a small amount of oil until browned on each side and set aside.
Apple – Cognac Sauce:
1 medium onion
14.5 oz can of chicken stock
1 cup cognac
1/2 cup apple liquor
2 granny smith apples, sliced
Cook above ingredients over med heat until reduced by 2/3 (this may take 30 minutes). Place in food processor and puree, add 3 tablespoonsful butter and stir. Easy!
Finish pork in the oven at 500 degrees for 20 minutes or until they reach 160 degrees on a meat thermometer.
Slice tenderloins and place on sauce to serve.
