Mashed Potatoes

6-8 med. baking potatoes (approx. 2.5 lbs.) peeled and cubed
4 Tbs. Butter
3/4 -1 cup milk (personal preference...skim to Half-n-Half)

Boil potatoes in salted water until very tender about 20 minutes, drain. Return to same pot and mash with butter and milk until creamy. Add any of the following to the potatoes and enjoy!

Here it is fall again and we are all thinking of leaves falling (and raking them), fires in the fireplace and warm cozy foods to keep us secure. The best comfort food of all is, of course, mashed potatoes. They are so good and easy to prepare - here are a few alterations to make this comfort food even more sensational.

**1/4 cup prepared Horseradish - great with red meats like steak or filet mignon
**1 head roasted garlic and 2 Tbs fresh chopped chives
**1/4 cup freshly grated Parmesan and fresh ground pepper
**3 Tbs coarse-grain mustard (like Grey Poupon) - awesome with grilled salmon or chicken
**1/4 cup fresh chopped rosemary - use leftovers made into patties and pan-fried for breakfast
