The following recipe comes from our friends at The Farm on Vashon, a subscription farm - "The farmer commits to provide the subscriber certain amounts of fresh and farm processed food and the consumer finances their share in advance". This recipe was delivered with a Bag O' Peppers, slightly hot Anaheim's and flavorful Pracillas - give it a try!

Red Rice

3 - 5 peppers, stemmed, seeded (for less heat), roughly chopped
1/3 c. vegetable oil
3 c. long grain rice
1 med. onion
2-3 cloves garlic, chopped
1 1/4 c. chicken or vegetable stock
2 c. salsa

Preheat oven to 350 degrees. Heat oil in a medium heavy saucepan over medium-low heat. Sauté the rice, stirring constantly, until golden and crackling, about 5 minutes. Add onions and chilies and cook until the onions just soften. Then add the garlic and sauté until the aroma is released. Pour in the stock and salsa, mixing well to combine. Transfer to a 4-quart baking dish. Cover with foil and bake until the liquid is absorbed and the rice is tender. About 30-40 minutes...stir and serve.
