Red Leaf Salad with Raspberry Vinaigrette, Caramelized Walnuts and Kasseri
To save time, make the dressing and walnuts a day ahead, they keep well.
Toss together:
1 bunch torn red leaf lettuce
1/3 c. crumbled kasseri cheese
1/4 c. dried cranberries
1/3 c. caramelized walnuts
Raspberry vinaigrette to taste
fresh ground pepper
Raspberry Vinaigrette
1/4 c. raspberry vinegar
1/4 c. olive oil
2 tsp. raspberry liqueur
1 Tbsp. honey
herbs to taste ( I use basil, oregano and chives)
fresh ground black pepper
Add all ingredients to a jar and shake until blended. You can add additional honey to sweeten.
Caramelized Walnuts
1/3 c. walnut pieces
1/4 c. brown sugar
1 tbs. butter
In a small skillet over medium heat stir all ingredients together. Stir continuously until walnuts are coated and sugar is melted and browned. Remove from heat and spread onto wax paper to cool.
