Now that grilling season is wrapping up and I have been pan grilling my steak this is a very easy and amazingly tasty topping.
There are many different kinds of mushrooms on the grocer shelves today and I love to experiment. My favorite are the shitake and the morels. You can get dried morels and reconstitute with some warm water.
1 clove garlic, minced
1/2 c. mushrooms, sliced
1/4 c. liquor, (ie. sherry, marsala, red wine, port, whiskey)
1/2 c. chicken stock
Pan fry steaks to desired doneness that remove from pan. Add to drippings mushrooms and garlic and sauté until tender about 3 minutes. Next add liquor and chicken stock, simmer until reduced to 1/3 c. liquid (about 5 minutes). Finally, remove from heat and whisk in butter until smooth and glossy.
Serve steaks topped with mushroom sauce and dig
in!
